Joel is currently the executive sous chef at The Barking Frog at Willows Lodge in Woodinville, but his culinary journey started long ago in Northern Ireland and England as a child.  From an early age, he was drawn to the creative process of working with his hands in cooking.  He got his first cookbook at the age of 10 and was soon experimenting with the recipes and wowing his family with his creations. 

In 2017 he moved to Washington where he worked in industry, learning the local cuisine, food, and culture unique to the Pacific Northwest.  In 2019 his journey took him to Snohomish where he worked at Chef Behind the Curtain alongside Bex Woolman whom he started the restaurant. Chef Behind the Curtain served a tapas-style appetizer menu featuring a beef wellington with varying options.  Here Chef Joel was able to use his creativity and attention to detail to provide a memorable experience for his guests.  This grew into a fine dining restaurant serving a 7-course meal now known as 16Eleven, which used farm fresh ingredients and an ever-changing seasonal menu. 


Now he joins us as a guest chef from The Barking Frog at Willows Lodge and we look forward to experiencing his unique take on local, seasonal cuisine.
