Five-Spice Scampi finished with Asparagus Salad

An outstanding pairing for the 2012 Riesling is the Five-Spice Prawns, the tropical notes compliment the exotic spices in this dish.

Five-Spice Scampi

2 lbs. peeled & cleaned Prawns, medium-size (21-25’s)
2-4 Garlic cloves, minced
3 tablespoons Five Spice Chardonnay Grape Seed Oil
1/2 cup Dry White Wine
1/2-3/4 cup Butter, cut into cubes
Salt & Pepper to taste

Heat large sauté pan over medium-high heat, add Five Spice oil, add prawns –cook 2-3 minutes. Add garlic, season with salt & pepper-cook 2 additional minutes. Add white wine and cook for 3 minutes-turn heat off and add butter cubes-slowly stirring until butter is melted and sauce is made.
Place in serving platter and top with shaved asparagus salad.

Asparagus Salad

1 lbs fresh Asparagus
Salt & Pepper to taste
Pinch of Dry Chili Flakes
2 tablespoons Lime Riesling Grape Seed Oil
Pinch Smoked Sea Salt

With vegetable peeler, shave 12 stocks asparagus and add Lime Riesling Oil, pinch of smoked salt, pinch of dry chili flakes and a couple grinds of the pepper-mill then toss and serve.
Yields: 4-6 servings
