Dancing Lady Fingers Tiramisu

Welcome to the 12 Days of Christmas! On the ninth day of Christmas, my true love gave to me:   9 Dancing Lady Fingers Tiramisu, 8 Mayan Hot Chocolates, 7 Swimming Rama, 6 Pumpkin Crème Brûlées, 5 Golden Onion Rings, 4 Colly Bird Pie, 3 Citrus Roasted Game Hens, 2 Chocolate Covered Turtles, and a Pear Soaked in Syrah.

A piece of trivia about the this well known song: In the older versions of the song the nine Ladies Dancing have been replaced by Drummers Drumming, Pipers Playing, Bears a Beating and were even swapped with the Lords a Leaping. Which version do you sing?

To pair with our nine ladies dancing we will open a bottle of our a2 Cabernet Sauvignon.


Yields 1 large tiramisu or 20 mini tiramisus

Tiramisu Base Ingredients:
1 lb. Mascarpone
6 Tablespoon Sugar
4 Eggs Yolks
2 Teaspoon Madeira
1 Tablespoon Folgers Instant Coffee
1 Tablespoon Brewed Coffee (room temperature)
1½ Teaspoon Spanish Chocolate (finely grated)
1 Package of Lady Fingers ( You will need at least 9 Ladies Dancing so buy a 12 count)
1 Cup Brewed Coffee (room temperature)
2 Tablespoons Madeira
3 Tablespoons Mexican Chocolate (ground fine)
1 Cup Whipped Cream
20 Espresso Beans

For the Tiramisu base: In a mixing bowl, whisk egg yolks and sugar until thick and pale, about 5 minutes. In a separate mixing bowl with a whisk attachment, whisk mascarpone just until smooth. Add 2 tsp Madeira, instant coffee, 1 tbsp coffee, 1½ tsp chocolate and the egg mixture from above and mix until thoroughly combined. Over-mixing will cause the mascarpone to curdle (don’t over mix).

To assemble: Add 2 tbsp Madeira to 1 cup brewed coffee. Dip a lady finger into the coffee mixture and place into a shot glass. Pipe in Tiramisu base, sprinkle with remaining Mexican chocolate dust. Top with whipped cream & espresso bean.
