Five Golden Onion Rings

Welcome to the 12 Days of Christmas! On the fifth day of Christmas my true love gave to me, five golden onion rings served with arugala aioli. We give to you this yummy twist on a classic golden ring paired with our 2012 Riesling.

Golden Onion Rings

Served with Arugula Aioli

2 Cups Whole Milk
¾ Cup Verjus (Sour Grape Juice) *
¼ Cup Riesling
2 Teaspoons Kosher Salt
2 Cups Whole Wheat Flour
1 Yellow Onion (Sliced ½ inch thick)
Countertop Deep Fryer (I use a Fry Daddy) filled to recommended level with Vegetable Oil

Heat oil in fryer to 375˚F

Start by soaking separated onions slices in a mixture of ½ cup Verjus and 1 cup milk. I do this 1st while I’m heating up fryer oil and making batter. Next, prepare dredging flour- in a small pan with sides, pour 1 cup flour and 1 teaspoon salt then mix with fork and set aside. For the batter- mix Riesling, ¼ cup Verjus, 1 cup milk, 1 teaspoon salt and 1 cup flour.

When Oil/Fryer is ready, line up the soaking onions, dredging flour, batter and fryer so that you can remove an onion slice, dredge in flour (shake off excess) and dunk into batter. Place battered ring into fryer with basket down. I can fit 4-5 onions in fryer at the same time (depending on size). Fry them for 3-4 minutes or until golden brown, remove from fryer and place on plate lined with a couple paper towels.  Serve with a side of Arugula aioli and enjoy!

Arugula Aioli

½ Cup Arugula
1 Cup Mayonnaise
Zest of ½ a Lemon
Juice of 1 Lemon
2 Garlic Cloves
Pinch of Salt & Pepper

Place all ingredients into food processor, pulse for one minute. Scrape down sides then pulse for an additional minute. Taste and adjust for salt if needed.
