A Pear Soaked in Syrah…
Welcome to the 12 Days of Christmas! On the first day of Christmas my true love gave to me… a partridge in a pear tree.
On our first day of 12 days of Christmas Recipes, we will be pairing (pun intended) a bacon wrapped Syrah poached pear stuffed with Cougar Gold cheese with our 2011 Jet Black Syrah.
Syrah Poached Pears
4 Bartlett Pears
1 Bottle Syrah
1 Cinnamon Stick
4oz Cougar Gold Cheese
12 Slices Bacon
¾ Cup Brown Sugar
Start by peeling pears, place into medium stock pot. Cover with wine, add cinnamon stick and cloves and cook on medium-high heat until wine starts to boil. Turn heat to medium-low and cook for 15 minutes. Remove pears from wine and set aside (allowing to cool). Continue to cook wine until it has reduced by half.
After pears are cool, cut in half (from top-bottom), core each half. Stuff each pear with Cougar Gold Cheese and put back together. Wrap each pear with 3 slices of bacon, using tooth picks to hold bacon in place and pears together. Dust each pear with brown sugar and gently rub it in.
Roast pears standing upright on parchment paper in oven set to 400˚F for 15-20 minutes or until bacon is golden brown.
I serve them in pasta bowls with the reduced spiced wine.
